February Healthy Living Article - The Importance of Vitamin B12

Vitamin B12, like all vitamins, is an organic compound that is essential for our normal metabolic function and overall health. B12 is a water soluble vitamin and so very little is stored by the body so it is important to make sure you are getting an adequate amount in your diet. Also, because of this, B12 deficiency is commonly under diagnosed. Here is a quick list of some of the important effects B12 has on your health:
  • B12 is required for DNA synthesis
  • B12 helps regulate fatty acid synthesis and energy production
  • B12 is essential for the production of red blood cells
  • B12 plays important role in functioning of brain and nervous system

Vitamin B12 is found in supplements in 3 different forms, cyanocobalamin, methylcobalamin and hydroxocobalamin. Cyanocobalamin is found most commonly in supplements but is the least absorbed and also releases a small amount of cyanide as a byproduct. Methylcobalamin and hydroxocobalamine release no cyanide and are much better absorbed by the body.

February Healthy Recipe - Cod with Tomato Red Wine Sauce

The sun has been teasing us with glimpses of spring so I thought for February I give you a recipe for something a little lighter than the wintery dishes the last few months. Here's one of my favorite things I make at home.

Sauce:
3 tablespoons olive oil
½ cup finely diced yellow onion
1 teaspoon minced garlic
¼ cup small diced Serrano ham
½ cup small diced red bell pepper
½ cup small diced yellow bell pepper
1 cup tomato, peeled, seeded and diced
1 teaspoon chopped fresh thyme leaves
½ cup red wine
1 tablespoon chopped parsley
cayenne, salt and freshly ground pepper to season

Cod:
2 tablespoons canola oil
4 (6 oz) codfish fillets
2 sprigs thyme
2 cloves garlic, peeled and halved
salt and freshly ground white pepper (or black if you don't have white pepper)

Directions:
1. On medium-high, heat olive oil in heavy bottomed pan and add onion and sweat until tender.
2. Add garlic, ham and peppers and cook until soft.
3. Reduce heat to low, add tomatoes and thyme and cook for 20 minutes.
4. Add red wine and cook for another 15 minutes.
5. Finish with parsley, cayenne, salt and pepper to taste.
6. Heat another pan until hot and add canola oil.
7. Season fish on both sides with salt and pepper and add to pan with garlic and thyme and lower heat to medium. Cook until golden brown, about 6 minutes.
8. Flip fish over and finish cooking for another 3 minutes.
9. Spoon sauce onto a plate and place fish in the middle.
